Baked Chicken with Sauerkraut and potatoes

INGREDIENTS:
1/2 of whole chicken
2 slices of bacon
1lb of sauerkraut
3 potatoes of choice
1 polish kielbasa
1/2 cup of white wine
1/4 cup of whipping cream
butter
pinch of thyme
2 cloves of garlic sliced
salt
pepper
DIRECTIONS:
1. Cut chicken into 1/4 pieces.
2. Salt, pepper, and thyme to taste.
3. Peel and slice potatoes into 1/4″ slices and do the same with the kielbasa.
4.Place bacon on bottom of large glass cooking dish.
5. Place sauerkraut and juice on top of bacon.
6. Mix kielbasa and potatoes into the sauerkraut.
7. Place 1/4 pieces of chicken evenly on top of the sauerkraut mixture.
8. Add 1/2 cup of white wine.
9. Cover with lid or aluminum foil and bake on 350 for 35-40 minutes until chicken is tender.
10.Check every 15 min and add water if needed during baking.
11. 10 minutes before chicken is done take out of oven add 1/4 cup of whipping cream, garlic and place small slices of butter on each piece of chicken.
12. Place back in oven and cook until crispy.(do not cover)
SERVES: 4
SIDE-DISH: bohemian dumplings, sliced bread.
Peach Cobbler

1 stick of margarine
1 large can of peaches in syrup
1c. Jiffy mix
3/4c. sugar
1c. milk
pinch of cinnamon
DIRECTIONS
1. Melt stick of margarine in a casserole dish.
2. Pour in can of peaches with syrup.
3. In a small mixing bowl mix Jiffy, sugar, and milk. Mix well.
4. Pour mixture over peaches and butter mix. DON’T STIR. Sprinkle cinnamon on top.
5. Bake at 325 or 350 until golden brown for 30 minutes.
SERVES: 6-8

Grilled Avocados

INGREDIENTS
1 Tbsp. olive oil of your choice
1 Tbsp. lime juice or 1 lime squeezed
2 large ripe avocados halved, seeded, and peeled. Tip: Avocados are ripe when they are dark in color and feel soft when you squeeze them.
1/4 tsp. salt
1/4 c. picante sauce
1 oz. Monterey Jack cheese or cheese of your choice.
Fresh cilantro
Sour cream if desired
DIRECTIONS
1. Stir olive oil and lime juice together. Brush avocados with oil mixture all over then sprinkle salt onto the cut sides of the avocados.
2. For gas grills preheat grill and cook on medium heat. For all other grills grill as normal uncovered over medium coals.
3. Grill avocados with cut sides down on rack for 5 minutes or until brown. Then turn avocados cut side up and fill with sauce and cheese. Cover grill and grill 5 more minutes until the cheese starts to melt.
4. Remove avocados when done and sprinkle with cilantro. Top with sour cream if desired.

INGREDIENTS:
4 cups of milk
4 tsp. of your favorite instant coffee
8 tsp. of sugar
DIRECTIONS:
1. Bring milk to a boil over medium heat in a saucepan.
2. Stir constantly.
3. When milk begins to boil turn off heat.
4. Add coffee and sugar stir until dissolved.
5. Serve hot.
6. Add whipped cream on top and a drizzle of chocolate syrup if desired.
Jambalaya Southern Inspired

INGREDIENTS
6 oz. spicy smoked sausage links (4)
6oz. cooked diced ham
2- 14oz. cans of stewed tomatoes
1 cup uncooked long grain white or brown rice
1 tsp. minced garlic= 1 clove
1/2 small chopped onion
1/2 small diced bell pepper
DIRECTIONS
1. Brown sausage and ham in a 4qt. saucepan over medium heat.
2. Add onion and bell pepper then brown some more.
3. Drain tomatoes but save the liquid into a measuring cup.
4. Cut drained tomatoes into smaller pieces.
5. Add water to the remaining liquid from tomatoes to equal 1 1/2 cup.
6. Add reserved liquid and tomatoes to saucepan cover and simmer on low heat for 30-35 minutes.
7. Stir occasionally.

Baking powder,1 tsp. = 1/2 tsp. cream of tartar and 1/4tsp. baking soda
Balsamic vinegar, 1tsp. = 1tbsp. cider or red wine vinegar and 1/2 tsp. sugar
Buttermilk, 1c. = 1tsp. lemon juice or vinegar and 1 c. milk (stand 5 min.) or c. yogurt
Flour, self rising, 1 c.= 1c. all-purpose flour and 1 tsp. baking powder, 1/2 tsp.salt and 1/4 tsp. baking soda
Half and Half or Light cream 1c = 1tbsp. melted butter and 1c whole milk
Onion, chopped 1/2 c = 2tbsp. dried or minced onion or 1/2 tsp. onion powder
Tomato sauce, 2c = 3/4 c tomato paste and 1c water
